The Chefs
Head Chef
Júlia Podall i Cerdà
A rising culinary talent shaped by her training at the Basque Culinary Center, with a Degree in Gastronomy and Culinary Arts, is now guiding the culinary experience at The Horse Club Library Restaurant at The Ranch.
“The kitchen is a place of endless learning, where deep respect for ingredients and heartfelt human connection coexist with both rigor and creativity”. Júlia spent three summers contributing to the vibrant food culture of La Santa Market, an early chapter that enriched her understanding of seasonal produce and community-driven gastronomy. A defining milestone of her career was spent alongside well-renowned Chef Nandu Jubany, contributing to diverse projects from Formentera to Baqueira, hotels, and bespoke catering.
She further refined her craft at L’Atelier Barcelona and explored artisanal chocolate with Lluc Crusellas at Eukarya, deepening her appreciation for craftsmanship and sensory storytelling. Today, Júlia returns to the heart of Costa Brava to express her authentic and heartfelt vision through a tasting menu crafted entirely from scratch that reflects the free spirit of its unique setting.
Sous Chef:
Iván Medina Holgado
A chef-in-training who resonates with genuine commitment to craft, embraces challenge, and unfolds appreciation for great food will be Júlia’s right-hand man in The Horse Club Library Restaurant.
“I am passionate about creating a gastronomic concept with identity and energy, where the main goal is to offer a complete experience to the diner in a space as unique as The Horse Club Library Restaurant.”
His journey through various kitchens has been built with quiet dedication and constant improvement. He recently worked at La Santa Market, where he consolidated his leadership, organisational skills and teamwork with ease. Previously, his time at Grupo Cañitas led him to participate in the opening of Cañitas al Fresco and to collaborate on services at Eñe and the Antorchas event — experiences that deepened his understanding of kitchen dynamics and the subtle balance between creativity and execution.
In addition, his internships at Sensacions Gastronomy & Emotions and Foodlona further enriched his craft, supporting high-end catering and demanding professional events with care, precision and a collaborative spirit. Now, under Júlia’s guidance and direction, Iván showcases his talent as a rising culinary star, ready to captivate palates with a meticulous and exquisite Spanish cuisine.
